Abbacchio alla Cacciatora - Lamb "Hunter" style

Ingredients

3 1/4 pounds of lamb cut in pieces olive oil
1/3 cup vinegar
1/2 tablespoon flour
1/3 cup water
2 cloves of garlic, minced
1 sprig of rosemary
2 sage leaves
salt and pepper to taste

Instructions

In a large pan heat some olive oil and add the garlic, salt, and lamb. Brown the lamb for 15 minutes. Add the sage, rosemary, and pepper, lower the heat to low. Add the vinegar and let it cook, stirring occasionally. Add the flour and water to the pan. Cover the pan and cook for 15 minutes. If the liquid gets too thick, add some more water. The lamb is ready when it has reached the desired level of doneness.
