SPAGHETTI ALLA CARBONARA

Ingredients

1 pound Spaghetti
4 ounces pancetta or bacon

1 or 2 cloves of garlic, or a small onion, diced
3 eggs

4 ounces pecorino or parmigiano, grated

olive oil
salt and pepper to taste

Instructions

Boil the spaghetti in a large pot of salted water. Meanwhile, cut the pancetta into small pieces and put it in a large pan with some olive oil and the garlic. Saute until the pancetta browns. In a bowl, whisk the eggs with a pinch of salt and pepper and some pecorino. When the pasta is al dente, drain it and add it to the pan with the pancetta. Over low heat, slowly pour the egg mixture over the pasta and stir it for a minute, coating the pasta.
