CIAMBELLINE AL VINO - RING COOKIES WITH WINE
makes about 2 dozen

Ingredients

2 1/2 cups all-purpose flour
1/4 cup sugar
6 tablespoons olive oil
6 tablespoons dry white or red wine
pinch of ground cinnamon (optional)

Instructions

Preheat oven to 375˚F. Mix flour, sugar, and cinnamon in a large bowl. Add oil and wine to the flour mixture. Knead the dough for 6 minutes by hand, or mix in a food processor for 4 minutes. Move the dough to a floured surface, and continue kneading the dough by hand for another 2 minutes. To form the cookies, take a piece of dough (about a rounded tablespoon) and roll it out to make a little rope 4 inches long. Form it into a ring and pinch the ends to close it. Flatten it a bit with your palms and put it on a cookie sheet with a non-stick surface. Bake ciambelline for 15-20 minutes (they should be beginning to color). While they are still hot, transfer them to a cooling rack or a wooden board to cool for about an hour. The cookies should be hard when they are ready. Try eating them dunked in wine.
