FRITTATA DI ZUCCHINE - ZUCCHINI FRITTATA ______________________________ Ingredients 4 eggs ______________________________ Instructions Cut the zucchini and onion into thin slices and saute them in a frying pan over medium heat with a little bit of olive oil and salt and pepper. Chop the parlsey and add to the pan. Lightly beat the eggs with a fork, add salt and pepper. When the zucchini and onion are cooked tender spread them evenly in the bottom of the pan and then pour the eggs over them. Let the eggs firm up without stirring. When the eggs seem firm with the part on top still a little liquidy, run a spatula around the edges to loosen it a bit. Then grab a plate, put it over the pan and flip the fritata so it stays on the plate (you will probably want to wear an oven mitt on the hand holding the plate because it will be hot). The uncooked part should be on the plate. Then slide the frittata back into the pan to finish cooking (remember the frittata should have the uncooked side on the pan). When the egg on the bottom is cooked, it's ready to serve. Cut into slices and eat warm, or you can can it in the refrigerator and eat it cold.
