FRITTATA DI ZUCCHINE - ZUCCHINI FRITTATA

Ingredients

4 eggs
2 small zucchini
olive oil
1 small onion
1 small handful parlsey
salt and pepper to taste

Instructions

Cut the zucchini and onion into thin slices and saute them in a frying pan over medium heat with a little bit of olive oil and salt and pepper. Chop the parlsey and add to the pan. Lightly beat the eggs with a fork, add salt and pepper. When the zucchini and onion are cooked tender spread them evenly in the bottom of the pan and then pour the eggs over them. Let the eggs firm up without stirring. When the eggs seem firm with the part on top still a little liquidy, run a spatula around the edges and under to loosen it from the pan. Then grab a plate, and carefully slide the frittata onto the plate (you will probably want to wear an oven mitt on the hand holding the plate because it will be hot). Then carefully place the pan over plate and flip everything over so the frittata falls back into the pan to finish cooking. When the egg on the bottom is cooked, it's ready to serve. Cut into slices and eat warm, or you can put it in the refrigerator and eat it cold.
