SPAGHETTI ALLA GRICIA

Ingredients

1 pound Spaghetti
1 onion
1 teaspoon olive oil
3 to 4 ounces guanciale, or pancetta, or bacon
2 ounces grated Pecorino or parmigiano cheese
1 teaspoon freshly ground pepper

Instructions

Boil the spaghetti in a large pot of salted water. Meanwhile, sauté the onions in the oil until they turn golden. Add the guanciale cut into small pieces to the pan over medium heat. When the pasta is al dente, drain it conserving a little of the pasta water. Add it to the pan with the pepper and half the pecorino. If it seems dry, add some of the pasta water. Divide the pasta among the serving plates and top with the remaining pecorino.
