TRAMEZZINI PROSCIUTTO COTTO - CRUSTLESS HAM AND MOZZARELLA SANDWICHES

Ingredients

white sandwich bread
mayonnaise
sliced ham
fresh mozzarella (the kind that comes packed in water), or white cheese singles

Instructions

Cut the crusts off the bread. Spread mayonnaise on one side of each slice. If you are using fresh mozzarella cut it in thin slices and let the liquid drain off. Place the cheese slices on the bread. Add a slice or two of ham on top of the cheese for half the bread slices, or if you want to be fancy, roll up the ham slices and put those on the cheese. Close up the sandwiches and cut them diagonally to make triangles. Now you can eat the sandwiches cold, or you can heat them up to slightly toast the bread and melt the cheese a little, using a pannini press or a toaster oven.

Note: These are sandwiches that are bought at a coffee bar as a breakfast or snack. The bread used to make the tramezzini is made especially for these sandwiches and is larger than American sandwich bread so the resulting sandwich triangles are larger. Both fresh mozzarella and white "mozzarella" cheese singles are used in the bars, but the fresh mozzarella tramezzini are usually in the nicer bars and taste better.
